We try to have fish or seafood at least 4 times a month. So, when I saw these two beautiful trouts, I just knew what to do with them. I just love the taste of oven baked fish and veggies from the oven. I most of the time stuff the whole fish with herbs, butter and (sometimes) a slice of lemon or tomato. It is a great and simple meal, also very healthy. Oven baked Trout and Veggies Ingredients (serves two): 2 medium trouts (whole, with head and fins) 2-4 large spoons of butter Herbs as pleased: Thyme, Oregano, Sage, Rosmary 1 clove of garlic salt, pepper and a bit paprika de la vera 2 slices of lemon 2 tsp Olive Oil 2 pieces of tinfoil (each large enough to wrap up one fish) Veggies: 2-4 medium sized potatoes 1 orange bell pepper (or any other colour, really) 6 mushrooms 2 handsful of fresh baby spinach ca. 75 gr. grated cheese (gouda, cheddar, or any other like these) ca. 50 gr. Gorgonzola (I always use "dolce") some of the mentioned herbs 1-2 cloves of garlic salt, pepper, chilli 3 large spoons of olive oil How I did it: Carefully wash the fish under cold water, dab it dry with paper towels. Finely chop the herbs (put a bit of the chopped herbs aside for later) and mix them with the butter, add the garlic and the other seasoning. Preheat oven to 200 celsius (two sided heat). Take one sheet of tinfoil, dribble 1 tsp olive oil onto it, add salt, pepper and chilli. Mix it a bit (yes, on the tinfoil), put one fish onto the mix, stuff the fish with half of the butter, season the upper side and drizzle a bit of the herbs onto it. Now make a package with the tinfoil. Fold it around the fish, so that there is still some space left. Try to make sure that no fluid can get out, so fold the sides carefully. Repeat everything with the other fish. Chop the veggies into pieces, slices, or however else you like them (except the spinach), put everything into a baking dish, season it as you please (e.g: salt, pepper, chilli, garlic, smoked pepper powder, some of the chopped herbs), mix it a bit so the seasoning and oil covers all the veggies. Put it for 20 min. into the oven, after this, take out the dish, add the spinach and the cheese, put it back into the oven for another 15 to 20min. At this point, put the fish packages into the oven as well. Normally the fish should not take more than these max. 20min. Take everything out and arrange onto plates! Goes perfect with a nice glass of white wine :) Enjoy and love! CeeBee
