An manchen Tagen muss es einfach etwas Süßes zum Frühstück sein. Der Titel klingt sicher nach unglaublich viel Arbeit, aber tatsächlich ist dieses Frühstück wirklich recht schnell gemacht und es braucht nicht mehr als zwei Pfannen und einen Topf.
Das Beste daran ist, das alles frisch und selbst gemacht ist und man damit selbst bestimmen kann, wieviel Zucker man nimmt oder wieviele Zutaten überhaupt wirklich nötig sind. Das Kompott kommt zum Beispiel ohne zusätzlichen Zucker aus, in dem Pancaketeig ist auch nur wenig verarbeitet. Die eigentliche Süße bekommt alles durch die karamellisierte Birne. Anstatt von herkömmlichem Zucker verwende ich mittlerweile meist entweder Erythrit, Xylit oder Kokosblütenzucker. Ich nenne wie immer keine Namen von Marken, aber in vielen Drogerien und Supermärkten gehören diese Produkte schon zum Standartsortiment. Wichtig bei diesen alternativen Zucker-Arten ist folgendes: Kokosblütenzucker hat einen starken Eigengeschmack nach Karamell, ist nicht ganz so süß, aber er färbt die Speisen auch recht stark. Das ist zum Beispiel für dunkle Sossen ganz praktisch, bei denen auch der Karamellgeschmack viel beitragen kann. Erythrit und Xylit haben keinen so starken Eigengeschmack, sie süßen quasi genau so stark wie herkömmlicher Zucker. Nimmt man aber einige Körner in den Mund, wird man feststellen, dass beide einen starken "kühlenden" Effekt haben. Der Mund wird regelrecht kalt. Für dieses Gericht habe ich nur Erythrit verwendet. Der Pancaketeig ergibt mehr Pancakes, als man für 2 Personen braucht. Ich esse sehr gerne kalt mit Frischkäse, Nussbutter und/oder Marmelade bestrichen. Für mehr Personen einfach etwas mehr Kompott kochen und in einer größeren Pfanne 2 Birnen karamellisieren. Die Zubereitung ändert sich dadurch nicht, man braucht entsprechend nur etwas mehr Butter und Zucker. Zutaten (2 Personen): - 3 Eier (M) - 75gr Mehl (herkömmliches Weizenmehl, Dinkelmehl oder gemischt mit Sojamehl) - 100ml Milch - 3/4 Päckchen Backpulver - 1 Prise Salz - 1 TL Zucker - 4 EL Öl - 200gr Pflaumen oder Zwetschgen - 1/2 TL Zimt - 50ml Wasser - 1 reife Birne - 50gr Butter - min. 50 gr. Zucker (oder entsprechende Alternative) (- optional: Schlagsahne, essbare Blüten, Minze) Zubereitung: Die Pflaumen entkernen, in schmale Spalten schneiden, in einen Topf geben und mit Zimt bestäuben. So viel Wasser hinzugeben, dass der Boden bedeckt ist und langsam bei mittlerer Hitze (Stufe 5-7) für 15min. einköcheln. Gelegentlich umrühren, abkühlen lassen. Die Eier mit dem Mehl, Backpulver, Milch, Zucker und Salz zu einem Teig verrühren. Der Teig sollte noch flüssig sein, aber recht zäh von einem Löffel laufen. Zu Flüssig: Mehl hinzugeben und unterrühren, bis die Konsistenz erreicht ist. Zu fest: Milch hinzugeben. Bei beiden Fällen: ggfs. noch etwas Zucker hinzugeben. Ca. 10-15min. stehen lassen, damit das Backpulver den Teig etwas aufquellen kann. Eine Pfanne erhitzen (Stufe 8-10), 2 EL Öl hinzugeben und den ersten Teil der Pancakes braten. Dafür jeweils 2-3 Esslöffel Teig pro Pancake in Pfanne geben. Für ca. 5 min. auf jeder Seite braten. Wiederholen, ggfs. noch etwas Öl hinzugeben, bis der Teig aufgebraucht ist. Die Birne in Scheiben schneiden, eine kleine Pfanne erhitzen, Butter hinzugeben. Wenn die Butter köchelt (= viele kleine Bläßchen), den Zucker hinzugeben und aufkochen. Wenn die Mischung sirupartig aussieht, die Birnenscheiben hinzugeben. Immer wieder vorsichtig wenden. Weder der Birne, noch die Flüssigkeit sollte anbrennen, sonst wird sie bitter. Nach ca. 10min ist die Birne weichgekocht, und die Flüssigkeit sollte golden sein. 1-2 EL Kompott auf dem Teller verteilen, einen Pancake darauf geben, dann ein paar Birnenscheiben und ca. 1 TL Sauce. Einen zweiten Pancake darauf legen, Kompott und den Rest des Birnensirups darüber träufeln. Wenn man möchte, dann man noch etwas Sahne schlagen und auf den Pancaketurm geben und ein paar essbare Blüten und getrocknete (oder frische) Minze darauf streuseln.

Ich mag Gerichte, die einfach und schnell gehen, weil ich an Wochentagen meist erst recht spät nach Hause komme und dann so richtig hungrig bin. Hühnchen gibt es recht oft, da es super vielfältig verarbeitet werden kann, toll schmeckt und einfach zu zubereiten ist. Dieses Gericht ist ein echtes Wohlfühlessen und ohne großen Aufwand zuzubereiten. Im Prinzp braucht man nur einen Topf, eine Pfanne, eine Schüssel und eine Backform.
Zutaten: - 1 Hühnerbrust (in 2 Hälften geteilt, ca. 200 gr. Pro Person) - 4 mittlere Kartoffeln pro Person - 6 Stangen Mangold (geht auch mit frischem Spinat, ca. 250gr) - ½ Kopf Salat - ¼ Kopf Raddicchio - 1 handvoll Rucola - Sprossen nach Belieben - 2 Tomaten - 1/3 Paket Feta - Salz, Pfeffer, Chilliflocken, Kräuterpfeffer, 6 frische Salbeiblätter - Olivenöl, Essig - 1 Knoblauchzehe Zubereitung: Hühnerbrust abtupfen, mit Salz, Kräuterpeffer, gehacktem Knoblauch und Chilliflocken einreiben Kartoffeln halbieren, in einer Backform mit Gewürzen, Knoblauch und etwas Öl vermengen Katoffeln mit der Schnittseite nach unten auf das Backblech legen und bei 150 Grad im Ofen anbacken Mangold kleinschneiden und kurz blanchieren (ca. 10min.). Solltet ihr das Gericht mit Spinat machen, entfällt das Blanchieren. Der Spinat kann ca. 10 min. vor Ende so auf das Backblech gegeben werden. Hühnerbrust und die Salbeiblätter in einer Pfanne von allen Seiten scharf anbraten, das Fleisch sollte etwas gebräunt sein. Die Kartoffeln wenden, auf der anderen Seite des Blechs den Mangold (bei Spinat: jetzt hinzugeben, fällt extrem zusammen) hinzufügen, etwas Feta darüber geben, vorsichtig salzen (je nachdem ist der Feta schon sehr salzig, also unbedingt testen) und pfeffern. Salat und Tomaten grob in Stücke schneiden, mit Essig, Öl, Salz und Pfeffer anmachen, Sprossen hinzugeben und Feta darüberbröseln Für die letzten 10min den Ofen auf 180 Grad schalten und die Hühnerbrust nochmal hinzugeben. Die Hühnerbrust in Scheiben schneiden, das Gemüse auf einer Platte anrichten und den Salat an die Seite legen. Perfekt dazu: selbstgemachte Estragon-Mayo (Blogeintrag dazu kommt später). Unter der Woche frühstücke ich nie, da ich durchs Pendeln zwischen meinem Wohnort und der Arbeit früh aufstehen muss und mir dann nie der Sinn nach Essen steht. Kaum zu glauben!
Aber an den Wochenenden mache ich dann gern ein etwas aufwendigeres Frühstück, einfach um die freien Tage zu feiern. Diese Quiche ist damals tatsächlich eher aus Ratlosigkeit entstanden, weil ich nicht genau wusste, was ich mit den Zutaten, die ich noch im Kühlschrank hatte und die als nächstes verwendet werden mussten, machen sollte. Tatsächlich entstehen viele meiner Gerichte auf diese Art. Ich schaue in den Kühlschrank und lasse mich inspirieren, was ich denn alles mit den wunderbaren Sachen machen kann. Ich finde die Verschwenung von Lebensmittels Ich versuche 1-2mal pro Woche etwas mit Fisch zu kochen und gräucherter Lachs oder Forelle eignet sich super insbesondere für Brunchs. Die Quiche ist super schnell gemacht, passt daher auch gut zu Parties oder als schnelles Abendessen mit Salat an einem stressigen Wochentag. Den Räucherlachs gebe ich immer erst vor dem Servieren auf die noch heisse Quiche. Wenn es für einen Brunch für zwei ist, lege ich immer nur Lachs auf die Stücke, die auch gegessen werden, auf die Art kann man die Quiche super aufheben und später noch kalt oder warm weiteressen. Zutaten: - 3 Eier (Größe M) - 2 EL Frischkäse - ½ mittlere Süßkartoffel - 3-4 handvoll frischer Spinat - 1 Paket Räucherlachs - 1 EL grober Senf - 50 ml Milch - 150 gr geriebener Käse - 1 TL getrocknete Kräuter - Salz, Pfeffer Zubereitung: Die Süßkartoffel reiben und in eine Schüssel geben, etwas Salz dazu, durchmischen und 15min ziehen lassen, dann so viel Wasser wie möglich auspressen Die Eier mit dem Frischkäse, dem Senf, den Kräutern und etwas Salz und Pfeffer gut vermischen Eine Tarteform leicht einfetten Eine handvoll Spinat auf dem Boden verteilen, dann die geriebene Süßkartoffel darüber geben, die Hälfte der Eimasse darüber verteilen Den restlichen Spinat darübergeben und die restliche Eimasse verteilen Geriebenen Käse darüber streuen und bei 200 Grad für 15-20min backen Den Räucherlachs erst vor dem Servieren auf die noch heisse Quiche geben Eine super einfache und gleichzeitig sehr leckere Suppe, die eigentlich zu fast jeder Jahreszeit passt, macht mich immer glücklich. Diese Suppe ist wirklich schnell gemacht, so dass sie selbst nach einem anstregenden Tag noch leicht zu kochen ist und schmeckt großartig. Da ich meist Spinat und oftmals auch noch ein anderes grünes Gemüse im Kühlschrank habe, ist die Suppe auch super variabel. Für dieses Rezept verwende ich einige Rosenkohlblätter, aber Wirsing, Mangold oder Schwarzkohl würde sicher auch funktionieren.
Um sie etwas spannender zu machen, gebe ich auch immer eine Einlage hinzu. Heute abend waren es pochiertes Ei, gebratene Selleriestücke und knusprige Nüsse. Nun aber zum Rezept! Zutaten: - 250 gr frischer Spinat - 100gr Rosenkohl - 1 handvoll Zuckerschoten (ca. 10) - 1/8 Stange Lauch - 2 kleine braune Champignons (zu Deko, also optional) - Knollensellerie nach Geschmack - 75gr gemischte Nüsse (oder mehr, je nach Wunsch) - 1/2 Becher Schmand (oder Creme Fraiche) - 1l Gemüsebrühe - 1 Knoblauchzehe - ein Ei pro Person - Salz, Pfeffer, ger. Paprika, Kurkuma, Chilli - 1 Spritzer Zitronensaft - Öl zum Anbraten Zubereitung; Lauch kleinschneiden, Knoblauchzehe achteln, den Rosenkohl bei Bedarf putzen und kleiner schneiden (gart dann schneller) Öl in einem Topf erhitzen, den Lauch und den Knoblauch hinzufügen, leicht anschwitzen (ca. 3 Minuten). Den Rosenkohl hinzugeben, ca. 5 min anbraten und dann mit Salz, Pfeffer, Kurkuma, Chilli würzen. Mit der Gemüsebrühe ablöschen und 10min. kochen lassen Inzwischen den Sellerie in kleine Würfel schneiden, die Nüsse hacken und mit etwas Öl, Kurkuma und geräuchertem Paprika langsam anbraten (alles soll knusprig werden, aber nicht verbrennen). Nach der Kochzeit den Spinat bis auf einige Blätter in die Suppe rühren, mit einem Stabmixer bis zur gewünschten Konsistenz pürieren. Den Schmand hinzufügen, unterrühren und aufkochen lassen. Nochmal abschmecken und den Zitronensaft hinzugeben. Wenn die Suppe kocht, vorsichtig die 2 Eier aufschlagen und hinengleiten lassen (wie beim pochieren) für 5 Minuten kochen lassen. Währenddessen die übrigen Spinatblätter in sehr feine Streifen und die Pilze in sehr dünne Scheiben schneiden Mit einem Schöpflöffel erst die Eier in die Suppenteller geben, dann die Suppe darüber. Mit dem Gemüse und dem Sellerie/Nussmix garnieren, eventuell noch einen Klecks Schand dazugeben. Servieren und Genießen. Der Herbst ist eine perfekte Zeit, um eine warme Suppe geniessen. Insbesondere, da meine heissgeliebte Kürbiszeit beginnt. Daher teile ich heute mein liebstes vegetarisches Kürbisrezept mit euch.
Zutaten: für die Suppe: - ½ Hokkaido - ¼ Stange Lauch - ½ Petersilien- oder Pastinakenwurzel - ein Stück Knollensellerie - 4-5 Möhren - 1 kleine Süsskartoffel - Saft einer Orange - Kurkuma (frisch) und Ingwer - Salz, Pfeffer, Curry und Paprika de la Vera - Gemüsebrühe (750ml- 1l) - Wasser Blumenkohlbällchen: - ½ Blumenkohl - 1 Ei - ca. 75gr geriebener Käse - etwas Vollkorndinkelmehl zur Bindung (3 EL) Wie es gemacht wird (Dauer ca. 35 min, Schwierigkeit: leicht): Gemüse kleinschneiden, mit der Gemüsebrühe und den Gewürzen in einem großen Topf weich kochen. Dauert etwa 25 min. Währenddessen den Blumenkohl fein raspeln und (am besten in einer Mikrowelle) etwas andünsten. Er sollte aber noch bissfest sein, abkühlen lassen. In einer Schüssel den Kohl, das Ei und den Käse mischen. Mit Salz, Pfeffer, Curry und Ras el Hanout nach Geschmack würzen. Kleine Bällchen formen und in einer heissen Pfanne mit Öl goldbraun braten, beiseite stellen. Wenn das Gemüse weich ist, mit einem Mixer zur gewünschten Konsistenz pürieren. In einer tiefen Schüssel mit den Bällchen servieren. Nach Belieben mit Kürbiskernen, essbaren Blüten und etwas Kürbiskernöl oder SourCreme garnieren. So, since we will be staying at the Lago di Garda, Rimini and Bibione, I wanted to get a bit into shape for the beach... Also, just like with the Buddha Bowls I was curious about "green" smoothies or smoothies with a lot of raw green veggies for that matter. Bae was on board with this and so I tried a smoothie of my own creation.
I named it the green flamingo, because I recently found these pretty mason jars with flamingos and I just NEEDED to buy them. The fact that even though our kitchen is quite big, there is hardly room left where I can put my treasures, is totally another matter... As well as the fact, that Bae hardly ever finds anything in our kitchen, because it is sorted (accidentally, of course) according to how I want the things to be sorted... So glad, he does not get all too mad about this! But now to something completely different. Just a short disclaimer: All my recipes are based on what I (we) personally like to eat! First and foremost, eating and cooking or preparing things should be fun and an adventure! I find inspiration everywhere, but I hardly ever cook by recipes. I love to vary them and would like for you to do the same! So, when I write something down, please do not stick to it, if you do not like one or two ingredients. Or worse, don't try it to begin with! Please try out and vary every ingredient to your own liking. The base of this smoothie is a fruity "sourness" and the more "bitter" taste of the veggies. Stay within this range (and balance out the bitterness with sweet or sour tastes) and you can add nearly each and every veggie/fruit combination. My Green Flamingo is only an example of a mix that worked well (for my taste!) Ingredients (two servings): 1 pear 1 kiwi (peeled, of course) ca. 15 cm cucumber (washed, peel it or not --> that's up to you!) ca. 10 rasberries ca. 50gr blueberries ca. 75gr (or more, if you like) fresh, raw spinach leaves 3 spoons of either vanilla (that is what I used) or neutral protein powder at least 100 ml of ice cold water (more or less, depends on how thick you want the smoothie) Additional tips: - if you use neutral protein powder, you can add ca. 1/2 tsp vanilla extract - you can also add: 1/2 avocado, and/or 100gr watermelon - you can use strawberries instead of raspberries (sweeter taste) - if you want it a bit sweeter: add 1 tsp honey, or 2 tsp xylit (or birch sugar) - you can add additional almond/rice/soy/coconut milk or use only this instead of water (I mostly use unsweetened roasted almond milk) - or you can also use "real" milk! How I did it: Very pragmatic: Put all the stuff into a strong blender and blend until you get the consistency you want. Add additional fluids until thickness is perfect. Colour should be a light greenish/blueish tint. Pour into pretty jars/jugs/glasses or whatever and enjoy! I was intrigued when I first came across the Buddha Bowls, on Insta they were always so colourful and fantastic and yummy looking. I wanted to make on, but they also always seemed so big to me. I occured to me much later, that I can downscale them a bit... So I got these new deep plates and decided to give it a go.
Like I mentioned on Insta, my goal at the moment is to get the fridge as empty as possible. Bae and I will be travelling across Northern Italy in a few days and I really hate to let food go to waste. So for this Buddha Bowl, I did not buy a single thing, everything was already in my fridge or freezer. Since we try to eat as healthy as possible, I always keep the fridge well stocked with a wide variation of (at best seasonal/regional) veggies and fruit. The seasonal and regional aspect can be a bit challenging, but I always try my best. I understood that one can use whatever one likes to create a Buddha Bowl, but there are some guidelines. There should always be 5 parts: 1. Healthy Carbs like Black/Brown Rice, Potatoes, Millet or Buckwheat or Quinoa 2. Protein from Veggies like Tofu, Lentils, Chickpeas and such 3. Veggies of all kinds and colours seasonal Veggies and Salad, or whatever you feel like using for this 4. Dips and Sauces (homemade) like Hummus, Guacamole etc. 5. Toppings like Seeds, Sprouts, roasted Nuts etc. Ingredients (two servings): Fish: 250 gr of cod (or salmon or another white fish) 3 tbs of Teriyaki sauce 1/2 tbs of finely chopped ginger Veggies: 4 spoons of red lentils 1 handful of arugula 2 handful of finely sliced romaine 3 medium/large mushrooms 3 green asparagus spears (fresh) 2 medium carrots, spiralized (or grated, chopped, however you prefer) 1 red bell pepper, sliced 3 spoons marinated (oil/herbs/vinegar) chickpeas 3 spoons cashews (unsalted!) 1/2 avocado 2 tsp Teriyaki 2 tsp Oil 1 tsp Soy Sauce (low sodium) Dressing: 2 tsp Tahini 4 spoons neutral oil (eg. sunflower oil) 1/2 tsp soy sauce (low sodium) 1/2 tsp honey 2 tsp lime juice salt, pepper, smoked paprika powder (Paprika de la Vera) How I did it: First, I cut the fish to bitesize portions and marinated it in the teriyaki/ginger sauce. While it marinated, I prepared all the veggies. Washed, peeled (where needed) and cut them. I seared the asparagus and mushrooms with the Teriyaki, Soy Sauce and Oil for about 10 min. Wihle they were in the pan, I started to cook the lentils (4 spoons of dried lentils + 8 spoons of water + 1/2 tsp salt, put in a pot, heat up and let cook). The lentils need ca. 20mins to be ready. Took the asparagus/mushrooms out of the pan and used the same pan to fry the fish. I turned down the heat to ca. 5-6 and put the fish in the pan. While it slowly fried, I started to prepare the bowls. I put the salad/arugula at the bottom and arranged all the veggies around the edge (it is ok, when the asparagus/mushrooms cool down!) Then I made the dressing, which means I put all the mentioned ingredients into a container with a lid, closed the lid and shook it for about a minute, done. When the lentils were nearly done, I turned up the heat for ca. 3 mins. for the fish to 10 to brown it a bit. Took the lentils off the cooker, strained them. Arrange the lentils on top of the veggies, pour the dressing over the veggies and lentils and then take the fish off the cooker and put it on top of everything. That's it, basically. I like fresh cilantro, so I added chopped cilantro to my bowl, but there is a vast array of opinions about cilantro, so it is not a "Must" for this dish. We try to have fish or seafood at least 4 times a month. So, when I saw these two beautiful trouts, I just knew what to do with them. I just love the taste of oven baked fish and veggies from the oven. I most of the time stuff the whole fish with herbs, butter and (sometimes) a slice of lemon or tomato. It is a great and simple meal, also very healthy. Oven baked Trout and Veggies Ingredients (serves two): 2 medium trouts (whole, with head and fins) 2-4 large spoons of butter Herbs as pleased: Thyme, Oregano, Sage, Rosmary 1 clove of garlic salt, pepper and a bit paprika de la vera 2 slices of lemon 2 tsp Olive Oil 2 pieces of tinfoil (each large enough to wrap up one fish) Veggies: 2-4 medium sized potatoes 1 orange bell pepper (or any other colour, really) 6 mushrooms 2 handsful of fresh baby spinach ca. 75 gr. grated cheese (gouda, cheddar, or any other like these) ca. 50 gr. Gorgonzola (I always use "dolce") some of the mentioned herbs 1-2 cloves of garlic salt, pepper, chilli 3 large spoons of olive oil How I did it: Carefully wash the fish under cold water, dab it dry with paper towels. Finely chop the herbs (put a bit of the chopped herbs aside for later) and mix them with the butter, add the garlic and the other seasoning. Preheat oven to 200 celsius (two sided heat). Take one sheet of tinfoil, dribble 1 tsp olive oil onto it, add salt, pepper and chilli. Mix it a bit (yes, on the tinfoil), put one fish onto the mix, stuff the fish with half of the butter, season the upper side and drizzle a bit of the herbs onto it. Now make a package with the tinfoil. Fold it around the fish, so that there is still some space left. Try to make sure that no fluid can get out, so fold the sides carefully. Repeat everything with the other fish. Chop the veggies into pieces, slices, or however else you like them (except the spinach), put everything into a baking dish, season it as you please (e.g: salt, pepper, chilli, garlic, smoked pepper powder, some of the chopped herbs), mix it a bit so the seasoning and oil covers all the veggies. Put it for 20 min. into the oven, after this, take out the dish, add the spinach and the cheese, put it back into the oven for another 15 to 20min. At this point, put the fish packages into the oven as well. Normally the fish should not take more than these max. 20min. Take everything out and arrange onto plates! Goes perfect with a nice glass of white wine :) Enjoy and love! CeeBee As mentioned in my last insta post, I just love the combination of salad and chicken. They just go together like peas in a pot. Whether it is baked chicken, grilled chicken sauteèd chicken or just leftover chicken from the day before, with a nice fresh salad, it makes a fresh, light and easy lunch or dinner. I always try to keep quite a lot of veggies at home, so when you'd check my stock, you'd probably always find spinach, pepper bells, zucchini, broccoli, cauliflower, carrots, sweet and normal potatoes, eggplant and tomatoes, lettuce, mushrooms and sometimes cabbages. I try to have at least 4 of those always at home. I just love to vary with different ingredients (I think I mention this quite often ... ;) ) So, the basic chicken and salad is always a combination of what I have in stock together with the decision, if "today is a spicy, mild, asia or mediterrean day" (those are just examples). Yesterday for example, the Ras el Hanout caught my eye and since I hadn't used it in quite some time AND it is perfect with chicken, this was the way to go... For the salad dressing I wanted something that went along with the taste, but also gave the salad a bit individuality. Hence the mustard/honey dressing I'll describe later. Most of the time, I'd add just a little bit of carbs (e.g.: some black rice, lentils or 2 small potatoes) to the dish, but yesterday we already had a rich breakfast (also on Insta!) and some lunch, so I skipped the carbs and added some Piementos de Padron instead. I was nearly done with the recipe when it occured to me that I should maybe tell something beforehand. For me, it is always very difficult to tell, when chicken is done. It can be tricky to get it right. I always start off by putting the chicken skinside first into a quite hot pan (setting 10 of 12 on my stove) and leave it without moving the pan for 3-5min. Time depends on how much chicken there is, hoch thick the pieces are. Then I reset the stove to 8 and turn the pieces. The skin should have browned some, but should not be burned. I repeat the procedure, leaving the pieces for 5 min on each side until there are no more pinkish parts. If I am not sure, if it is done, I simply stick a fork into the meatiest part of the chicken. When no pinkish juice and only clear juice comes out, it should be fine. Oh, and there is some sourcream in the pic. Thought it would be nice to go along, but actually, neither of us thought about adding it. :-) But enough of the talk and on to the recipes... Spicy "Oriental" Chicken with Salad Ingredients (serves for two): 2 chicken legs or 1 chicken breast (or whichever part you prefer, with skin (crispy goodness), ca. 100-150gr meat per person) 1 tsp Ras el Hanout 1 salt/pepper/chilli flakes 4 tsp olive oil Salad: lettuce 2 small/medium yellow tomatoes 1 red bell pepper 4 mushrooms 10 black olives Dressing: 1 tsp mustard (medium spicy) 1 tsp honey 50 ml olive oil "White" Balsamico (Condimento di Balsamico) Salt and Pepper How I did it: First rinsed the chicken under cold water, dried it with some paper towels and chopped away some of the fat. Then I rubbed the spices into the chicken on both sides. Put it aside (outside the fridge*), while preparing the salad. Wash the salad, tomatoes and bell pepper (not the mushrooms, just clean them with a brush, if neccessary). Cut the tomatoes into quarters, the bell pepper into fine stripes and the mushrooms into thin slices. I hardly ever cut the salad, but rip it into pieces that are neither too large, nor too small. Arrange everything on a large plate. For the dressing: put all the ingredients into a glad with a lid. Close the lid and shake it very well. Done.. Pour the olive oil (sesame oil works with this as well) into a pan, heat it up and add the chicken, skinside down! Leave it for ca. 3-5 min on medium heat, turn it and leave it for another 5 min. Turn again, and reapeat until it is done (see above). Take the pan off the stove, set it aside while drizzling the dressing onto the salad. Put the chicken onto the plate and it is done... *Why leave it outside? It is better, if the chicken (or any meat, really) has room temerature when prepared. Also the spices and herbs can penetrate the surface easier. Have fun! Love, CeeBee Over the last few years I sadly developed a rather strong intolerance to gluten and fructose (but only certain kinds, as it seems) as well. I bake lowcarb/high protein bread myself to avoid wheat and it works very good. I'll write down the recipe in a later post (even if the pics might not be that good looking…) Paired with the fact that I also try to cut down on carb intake and try to avoid processed foods and sugar, creating something sweet for breakfast can be quite a challenge. But Bae and me both sometimes have a sweet tooth, so I tried to come up with an alternative to normal Crêpes, which are done with wheat flour. Also to avoid sugar and readymade sauces, I wanted to come up with alternatives for this as well. I replace most of the wheat flour with almond flour (sometimes blanched and finely chopped almonds are also declared and can be bought as “almond flour”, but I mean actual flour). For baking, a working alternative for gluten, which is also functioning as „glue“ keeping dough together, is e.g. oat bran or oatmeal. So on to the recipe! Crêpes with homemade Caramel Sauce and Berries Ingredients: Crêpes - 3 eggs - 50 ml cream - 150 ml milk (maybe more) - 100 gr almond flour - 60 gr spelt (or wholemeal) flour - 50 gr Xucker (or Xylit, Erythrit)* (optional: 1 tsp baking powder) (optional: 1 tsp unsweetened cocoa powder) Caramel Sauce: - 50 ml milk/cream - 1-2 soupspoons coconut oil - 50 ml honey (optional: 1 tsp unsweetened cocoa powder) Berry Sauce: - 50-75 gr mixed berries (fresh or frozen) - 50 gr Xucker - 50 ml water How I did it: Crack the eggs into a deep bowl, add the Xucker and all the liquid ingredients Whisk with a mixer until it looks fluffy (tiny bubbles) Add the flours and blend it all together. It should neither be too liquid, nor should it have the texture of dough. If one of those should be the case, don't panic! Either add some milk or add some flour (best do one soupspoon each time) until the texture seems right. If you want them to be a bit chocolatey, add the cocoa powder, if you want them to be more like pancakes**, add the baking powder. If you want both, just add both ;) Put aside, but outside the fridge for ca. 15-20 min. In the meantime you can prepare the Sauces. For the berry sauce, put the berries into a pot, put the water in as well. Boil the mixture for 5 min, reduce the heat, put the Xucker in and stir it. Done… For the Chocolate/Caramel Sauce: Pour the honey into a deep pot, heat up until it boils and let it boil for ca. 6 mins. Take of the stove and stir the rest of the ingredients carefully into the honey. But back onto the stove and let it simmer for about 15min. If you want to add a chocolate taste to it, either melt 25gr dark chocolate and pour it into the mix or add 1 tsp of cocoa powder. When this is done, heat up a large laminated pan. Drizzle a soupspoon coconut oil into it. With a ladle pour some of the dough in, spread it until it is very thin and looks like a Crêpe. Leave it for about 4 min, check if the Crêpe is done enough to carefully flip it. Bake on the other side for another 4 min. Take the Crêpe out of the pan, put on a plate. Repeat until all the dough is used up. Take out two plates. Place a Crêpe on the plate and place some of the berries and the Caramel sauce on it and wrap the Crêpe. Drizzle the two sauces on top of the Crêpe wrap. * the great thing about this Xucker stuff is: it contains NO bad carbs, and does not raise your insulin ** if you do pancakes, maybe you can't do the wrapped version like in the photo, in this case, just pour the sauces over the pancakes Enjoy and love CeeBee |
